Spaghetti squash is the winter squash that cooks into golden, twirlable strands—mild, slightly sweet, and sturdy enough to carry sauce without getting soggy. Oblong fruits ripen to a cheerful yellow and keep for months, so you can roast a half on a weeknight and have “pasta” on the table fast. Introduced by Japanese breeders in the early 20th century and popularized mid-century, it’s become a pantry workhorse for good reason: naturally gluten-free, light yet satisfying, and endlessly adaptable. Toss the strands with marinara or pesto, fold into casseroles, or finish simply with garlic, olive oil, and Parmesan; the seeds roast up for a salty snack. A good source of fiber with potassium and vitamin C, it delivers comfort without the heaviness.

Start seed indoors 3-4 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-85 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Or, plant seeds directly in the garden 1-2 weeks after average last frost date. Sow 3-5 seeds per hill, thinning to a final 2-3 plants per hill. Winter squash grow best in a warm site with full sun. Warm soil is essential to good seed germination and emergence. Using transplants can speed production.
