Summer savory (Satureja hortensis) brings a clean, peppery-thyme bite that brightens beans, poultry, grilled vegetables, tomatoes, potatoes, sausages and stuffings, tangy vinegars and mustard dressings—and even scrambled eggs or compound butter. Small summer flowers draw pollinators, and the leaves dry fast, keeping their character better than most soft herbs. Long called the “bean herb,” it’s also used as a soothing after-meal tea to settle the stomach and ease mild cramping; its thyme-like oils (thymol and carvacrol) lend gentle antimicrobial support for throat gargles and infusions. Use it fresh during peak bloom, then dry bunches for winter jars—savory earns its spot for flavor, function, and the simple pleasure it adds to everyday cooking.
Start seed indoors 6-8 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 75-85°. Transplant to the garden 1-2 weeks after your average last frost date. Or, plant seeds directly in the garden after average last frost date. Harvest leaves after plants have become established. Use leaves either fresh or dried.
